A cheesy delight filled with tender chicken and rich, tangy pimento cheese, these quesadillas are perfect for busy weeknights and gatherings alike.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pimento cheese
  • 4 large flour tortillas
  • 1/2 cup fresh onion, diced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by combining chicken, pimento cheese, green onions, garlic powder, cumin, salt, and pepper in a medium bowl.
  2. Heat a non-stick skillet over medium heat and drizzle with olive oil.
  3. Assemble a tortilla with the filling on one half, then fold it over.
  4. Cook the quesadilla in the skillet for 2-3 minutes until golden brown.
  5. Flip and cook the other side for another 2-3 minutes until the cheese melts.
  6. Repeat for remaining tortillas and filling, keeping cooked quesadillas warm in an oven.
  7. Slice into wedges and serve with salsa, sour cream, or guacamole.

Notes

If you have leftovers, refrigerate them and simply reheat in a skillet for a quick meal.
