- 2 cups cooked chicken, shredded
- 1 cup pimento cheese
- 4 large flour tortillas
- 1/2 cup fresh onion, diced
- 1 tsp garlic powder
- 1 tsp cumin
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the filling by combining chicken, pimento cheese, green onions, garlic powder, cumin, salt, and pepper in a medium bowl.
- Heat a non-stick skillet over medium heat and drizzle with olive oil.
- Assemble a tortilla with the filling on one half, then fold it over.
- Cook the quesadilla in the skillet for 2-3 minutes until golden brown.
- Flip and cook the other side for another 2-3 minutes until the cheese melts.
- Repeat for remaining tortillas and filling, keeping cooked quesadillas warm in an oven.
- Slice into wedges and serve with salsa, sour cream, or guacamole.
Notes
If you have leftovers, refrigerate them and simply reheat in a skillet for a quick meal.
