Ingredients

  • 2 pounds waxy potatoes (e.g., Yukon Gold or red potatoes)
  • 1 cup mayonnaise
  • ¼ cup Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup celery, diced
  • ½ cup red onion, finely chopped
  • 3 hard-boiled eggs, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and scrub the potatoes, then dice into 1-inch pieces.
  2. Place diced potatoes in a pot, cover with cold water, and add salt. Bring to a boil and then simmer for 10-15 minutes until fork-tender but firm.
  3. Strain the potatoes and let them cool slightly.
  4. Chop celery, red onion, and hard-boiled eggs.
  5. In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  6. Add cooled potatoes, celery, red onion, and eggs to the bowl and gently fold the mixture together.
  7. Cover and refrigerate for at least an hour before serving.

Notes

For added flavor, sprinkle with paprika before serving or garnish with fresh herbs.
