Ingredients

- 2 pounds waxy potatoes (e.g., Yukon Gold or red potatoes)
- 1 cup mayonnaise
- ¼ cup Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 cup celery, diced
- ½ cup red onion, finely chopped
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Wash and scrub the potatoes, then dice into 1-inch pieces.
- Place diced potatoes in a pot, cover with cold water, and add salt. Bring to a boil and then simmer for 10-15 minutes until fork-tender but firm.
- Strain the potatoes and let them cool slightly.
- Chop celery, red onion, and hard-boiled eggs.
- In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Add cooled potatoes, celery, red onion, and eggs to the bowl and gently fold the mixture together.
- Cover and refrigerate for at least an hour before serving.
Notes
For added flavor, sprinkle with paprika before serving or garnish with fresh herbs.
