A creamy, tangy potato salad with crispy bacon, perfect for BBQs and gatherings.


Ingredients

  • 2 pounds Yukon Gold or red potatoes
  • 6 strips bacon
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 4 stalks green onions
  • 1/4 cup fresh herbs, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and peel the potatoes, cutting them into bite-sized chunks.
  2. Place the potatoes in a pot with cold water, add salt, and bring to a boil. Cook until fork-tender, about 10-15 minutes.
  3. Cook the bacon until crispy and drain on paper towels.
  4. In a mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  5. Add the cooked potatoes, green onions, bacon, and herbs to the bowl. Fold in the dressing until well-coated.
  6. Chill for at least 30 minutes before serving.
