A creamy, tangy potato salad with crispy bacon, perfect for BBQs and gatherings.
Ingredients

- 2 pounds Yukon Gold or red potatoes
- 6 strips bacon
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 4 stalks green onions
- 1/4 cup fresh herbs, chopped
- Salt and pepper to taste
Instructions
- Wash and peel the potatoes, cutting them into bite-sized chunks.
- Place the potatoes in a pot with cold water, add salt, and bring to a boil. Cook until fork-tender, about 10-15 minutes.
- Cook the bacon until crispy and drain on paper towels.
- In a mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Add the cooked potatoes, green onions, bacon, and herbs to the bowl. Fold in the dressing until well-coated.
- Chill for at least 30 minutes before serving.
Notes
Feel free to experiment with herbs and additional toppings like cheese or veggies for variety.
