Ingredients
120g extra lean ground beef (96% lean / 4% fat)
1 packet low sodium taco seasoning
150g low-fat cottage cheese (Good Culture brand recommended)
½ baked sweet potato
½ ripe avocado, cubed
Drizzle of Mike’s Hot Honey (or any spicy honey)
Instructions
Cook the beef: Brown the ground beef in a skillet over medium heat. Add taco seasoning and a splash of water, then simmer for 2–3 minutes until fully flavored.
Bake your sweet potato: Roast in the oven at 400°F (200°C) for about 45 minutes or until soft. Cut in half and scoop out.
Assemble your bowl: Layer the beef, sweet potato, avocado cubes, and cottage cheese in a large bowl.
