- 4 Fresh Corn on the Cob
- 1/2 cup Cotija Cheese, crumbled
- 1/4 cup Mayonnaise
- 1 tsp Chili Powder
- 2 tbsp Lime Juice
- 2 tbsp Fresh Cilantro, chopped (optional)
- 2 tbsp Butter, melted (optional)
Instructions
- Prepare the corn by husking and rinsing it under cold water.
- Preheat the Blackstone griddle to medium-high heat.
- Grill the corn for about 10-12 minutes, turning occasionally for even charring.
- Mix together the mayo, lime juice, half the cotija cheese, and a pinch of salt in a bowl.
- Coat the grilled corn with the creamy sauce.
- Add the remaining cotija cheese and chili powder on top.
- Serve with lime wedges and cilantro for garnish.
Notes
For a spicy kick, add Sriracha to the sauce. For a vegan option, substitute mayo with vegan mayo and use nutritional yeast instead of cheese.
