- 4 Fresh Cucumbers, thinly sliced
- 1 Red Onion, thinly sliced
- 3 tablespoons Fresh Dill, chopped
- 3 tablespoons Olive Oil
- 3 tablespoons Apple Cider Vinegar
- Salt and Pepper to taste
- 1 cup Cherry Tomatoes, halved (optional)
Instructions
- Wash the cucumbers and slice thinly, about ¼-inch thick. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
- Slice the red onion thinly and soak in cold water to mellow the flavor, if desired.
- Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl. Add dill and mix well.
- Toss the cucumbers, onion, and cherry tomatoes (if using) in a large bowl. Pour the dressing over and gently combine.
- Chill the salad for at least 15-30 minutes to allow flavors to meld before serving.
Notes
For a twist, try adding feta cheese, olives, or jalapeños for extra flavor. Best enjoyed fresh, but can last in the fridge for 2-3 days.
