Description

Ingredients

  • 4 Fresh Cucumbers, thinly sliced
  • 1 Red Onion, thinly sliced
  • 3 tablespoons Fresh Dill, chopped
  • 3 tablespoons Olive Oil
  • 3 tablespoons Apple Cider Vinegar
  • Salt and Pepper to taste
  • 1 cup Cherry Tomatoes, halved (optional)

Instructions

  1. Wash the cucumbers and slice thinly, about ¼-inch thick. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
  2. Slice the red onion thinly and soak in cold water to mellow the flavor, if desired.
  3. Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl. Add dill and mix well.
  4. Toss the cucumbers, onion, and cherry tomatoes (if using) in a large bowl. Pour the dressing over and gently combine.
  5. Chill the salad for at least 15-30 minutes to allow flavors to meld before serving.

Notes

For a twist, try adding feta cheese, olives, or jalapeños for extra flavor. Best enjoyed fresh, but can last in the fridge for 2-3 days.
