Description

A simple and satisfying one-pot chicken spaghetti that combines tender chicken, flavorful spaghetti, and assorted veggies in a time-saving dish.


Ingredients

  • 1 lb Boneless, Skinless Chicken Breasts
  • 8 oz Spaghetti
  • 4 cloves Garlic, minced
  • 1 can (14.5 oz) Diced Tomatoes
  • 4 cups Chicken Broth
  • 1 medium Onion, chopped
  • 1 Bell Pepper, chopped
  • 1 tbsp Italian Seasoning
  • Salt & Pepper to taste
  • Parmesan Cheese for serving

Instructions

  1. Sauté the chicken in olive oil over medium heat, seasoning with salt and pepper until golden brown, about 5-7 minutes per side. Remove and set aside.
  2. Cook the chopped onion and bell pepper in the same pot for about 5 minutes until soft. Add minced garlic and stir for 30 seconds.
  3. Combine the cooked chicken, diced tomatoes, and chicken broth in the pot. Bring to a gentle boil.
  4. Add the spaghetti to the boiling mix, ensuring it’s submerged. Reduce heat and simmer for 10-12 minutes until al dente.
  5. Finish by chopping the chicken, stirring it back in with Italian seasoning. Adjust seasoning with salt and pepper. Simmer for another minute.
  6. Serve the spaghetti in bowls topped with grated Parmesan cheese and parsley.

Notes

Consider substituting with rotisserie chicken for faster preparation or adding more veggies for a nutrient boost.
