These red velvet cookie sandwiches are the perfect balance of rich, chewy cookies and silky cream cheese frosting. Ingredients
1½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 tsp baking soda
¼ tsp salt
½ cup unsalted butter, room temperature
¾ cup granulated sugar
1 large egg + 1 large egg yolk
2 tbsp buttermilk
1 tsp vanilla extract
1–2 tsp red gel food coloring
For the cream cheese frosting:
8 oz cream cheese, softened
¼ cup unsalted butter, softened
2 cups powdered sugar, sifted
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk flour, cocoa, baking soda, and salt.
In another bowl, cream butter and sugar until fluffy. Add egg, yolk, buttermilk, vanilla, and red food coloring. Mix well.
Gradually add dry ingredients to wet, mix until just combined. Chill dough 15–30 minutes if soft.
Scoop dough (1½ tbsp portions) onto baking sheets, 2 inches apart.
Bake 9–11 minutes until set at edges but soft in the center. Cool on sheets for 5 minutes, then transfer to a wire rack.
Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt. Beat until fluffy.
Spread or pipe frosting onto half the cookies, sandwich with remaining cookies.
Chill 30 minutes before serving for best results.
