Rhubarb Bars

For the crust:

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 cup cold butter, cubed

For the filling:

1 cup granulated sugar

2 tbsp all-purpose flour

2 large eggs

1/2 tsp vanilla extract

2 cups diced fresh rhubarb


Instructions

Preheat oven to 350°F (175°C).

In a bowl, mix flour and sugar for the crust. Cut in butter until crumbly.

Press mixture into a greased 8×8-inch baking dish.

Bake crust for 15 minutes until lightly golden.

Meanwhile, whisk together sugar, flour, eggs, and vanilla. Fold in rhubarb.

Pour filling over warm crust and return to oven.

Bake for another 35–40 minutes, until filling is set.

Cool completely before cutting into bars. Dust with powdered sugar if desired.
