Roasted Strawberry Whipped Ricotta Toast

Roasted Strawberries:

1 pint fresh strawberries, hulled & sliced

1 tbsp honey

1 tsp balsamic vinegar

Pinch of salt

Whipped Ricotta:

1 cup ricotta cheese

1 tbsp honey

½ tsp vanilla extract

For Assembly:

4 slices crusty bread, toasted

Fresh thyme or basil (optional)

Extra honey, for drizzling


Instructions

Roast the Strawberries:
Preheat oven to 375°F. Line a baking sheet with parchment.
Toss strawberries with honey, balsamic, and salt.
Spread in a single layer and roast for 20–25 minutes until caramelized. Cool slightly.

Whip the Ricotta:
Combine ricotta, honey, and vanilla.
Whip until smooth and creamy using a hand mixer or whisk.

Assemble the Toast:
Spread whipped ricotta generously on warm toasted bread.
Top with roasted strawberries, herbs if desired, and drizzle with honey.
