- 1 pound beef sirloin (or flank steak)
- 3 medium potatoes (russet or Yukon gold)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- A sprinkle of red pepper flakes (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash, peel, and chop the potatoes into bite-sized cubes. Toss in a bowl with olive oil, salt, and pepper.
- Spread potato cubes on a baking sheet in a single layer and roast for 20-25 minutes, stirring halfway through.
- In a large skillet, melt two tablespoons of butter over medium-high heat. Add minced garlic and cook for about a minute.
- Cut beef into 1-inch cubes, season with salt and pepper, and add to the skillet. Sear for 3-4 minutes on each side.
- Add rosemary and remaining butter to the skillet. Toss for an additional minute until beef is coated in the garlic sauce.
- Combine the roasted potatoes with the beef in the skillet or a serving dish.
- Plate and serve hot, garnished with extra rosemary or herbs if desired.
Notes
For a lighter version, substitute butter with olive oil. You can also modify the herbs and spices to suit your taste.
