Ingredients

  • 1 pound beef sirloin (or flank steak)
  • 3 medium potatoes (russet or Yukon gold)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • A sprinkle of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash, peel, and chop the potatoes into bite-sized cubes. Toss in a bowl with olive oil, salt, and pepper.
  3. Spread potato cubes on a baking sheet in a single layer and roast for 20-25 minutes, stirring halfway through.
  4. In a large skillet, melt two tablespoons of butter over medium-high heat. Add minced garlic and cook for about a minute.
  5. Cut beef into 1-inch cubes, season with salt and pepper, and add to the skillet. Sear for 3-4 minutes on each side.
  6. Add rosemary and remaining butter to the skillet. Toss for an additional minute until beef is coated in the garlic sauce.
  7. Combine the roasted potatoes with the beef in the skillet or a serving dish.
  8. Plate and serve hot, garnished with extra rosemary or herbs if desired.

Notes

For a lighter version, substitute butter with olive oil. You can also modify the herbs and spices to suit your taste.
