Ingredients

- 1 head of Romaine Lettuce
- 1 cup of Cherry Tomatoes
- 1 cup of Cucumber
- 1/2 cup of Red Onion
- 1/2 bell pepper, chopped (red, yellow, or orange)
- 1 cup of Cooked Chickpeas (canned works too!)
- 1/2 cup of Feta Cheese (optional)
- 1/4 cup of Olive Oil
- Juice of 1 Lemon
- Salt and Pepper to taste
Instructions
- Wash and chop the Romaine lettuce and place it in a large bowl.
- Slice the cherry tomatoes in halves and add them to the bowl.
- Peel the cucumber if desired, chop it up, and add it to the mix.
- Chop the bell pepper and toss it with the chopped romaine and cucumbers.
- Add the red onion finely chopped and mix it in.
- Drain and rinse the cooked chickpeas, then add them to the salad.
- Drizzle the olive oil over the salad and squeeze in the lemon juice, then toss gently.
- Adjust the flavors with salt and pepper to taste before serving.
Notes
This salad can be made in advance; just keep the dressing separate until ready to serve to avoid sogginess.
