  • 4 Sweet Potatoes
  • 1 lb Ground Turkey or Beef
  • 2 tbsp Olive Oil
  • 1 Sweet Onion, diced
  • 2 Bell Peppers, diced
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt and Pepper to taste
  • 2 cups Fresh Spinach (optional)
  • Avocado or Salsa for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the sweet potatoes: Wash them thoroughly, pierce with a fork, and place on a baking sheet. Bake for 45 minutes, or microwave for 5-7 minutes.
  3. Prepare the filling: In a skillet, heat olive oil over medium heat. Add onions and bell peppers, and sauté until soft for about 5-7 minutes.
  4. Add minced garlic, cumin, paprika, salt, and pepper. Cook for an additional 1-2 minutes.
  5. Add the ground turkey or beef, cooking until browned (7-10 minutes).
  6. Add spinach if desired, stirring until wilted.
  7. Assemble the sweet potatoes: Cut them open and scoop out some flesh, then fill with the savory mixture.
  8. Final bake them for 10 minutes to meld the flavors.
  9. Add toppings like avocado or salsa before serving.
