- 4 Sweet Potatoes
- 1 lb Ground Turkey or Beef
- 2 tbsp Olive Oil
- 1 Sweet Onion, diced
- 2 Bell Peppers, diced
- 3 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Paprika
- Salt and Pepper to taste
- 2 cups Fresh Spinach (optional)
- Avocado or Salsa for topping
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the sweet potatoes: Wash them thoroughly, pierce with a fork, and place on a baking sheet. Bake for 45 minutes, or microwave for 5-7 minutes.
- Prepare the filling: In a skillet, heat olive oil over medium heat. Add onions and bell peppers, and sauté until soft for about 5-7 minutes.
- Add minced garlic, cumin, paprika, salt, and pepper. Cook for an additional 1-2 minutes.
- Add the ground turkey or beef, cooking until browned (7-10 minutes).
- Add spinach if desired, stirring until wilted.
- Assemble the sweet potatoes: Cut them open and scoop out some flesh, then fill with the savory mixture.
- Final bake them for 10 minutes to meld the flavors.
- Add toppings like avocado or salsa before serving.
