Instructions
- Prepare the oranges: Wash them thoroughly, halve, and place in a saucepan with water. Bring to a boil.
- Boil the oranges: Lower heat and simmer for about 30 minutes until soft.
- Drain and cool: Let the oranges cool down, cut in half, and remove seeds.
- Blend the oranges: In a food processor, blend the cooled oranges into a smooth puree.
- Mix dry ingredients: In a mixing bowl, combine almond meal, sugar, baking powder, and salt.
- Combine wet ingredients: Whisk eggs and vanilla until frothy, then fold in the orange puree.
- Combine everything: Add the wet mixture to dry ingredients and mix gently.
- Prepare the pan: Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Pour and bake: Pour the batter into the pan and bake for 40-45 minutes or until a toothpick comes out clean.
- Cool and dust: Let the cake cool for 10 minutes in the pan, then transfer to a wire rack and dust with powdered sugar.
