Sometimes the best meals are the simplest—this one brings together buttery ground beef, roasted sweet potatoes, and creamy avocado for a plate that’s satisfying, energizing, and totally fuss-free. Great for dinner, meal prep, or a no-brainer weeknight fix.
Ingredients
1 lb ground beef (grass-fed preferred)
1 tbsp butter or beef tallow
2 medium sweet potatoes, cubed
1 tbsp olive oil (or cooking fat of choice)
1 ripe avocado
Salt to taste
Instructions
Roast Sweet Potatoes: Preheat oven to 400°F (200°C). Toss sweet potato cubes in olive oil and a pinch of salt. Roast for 25–30 minutes until golden and tender.
Cook Beef: In a skillet, heat butter or tallow. Add ground beef and cook until browned, seasoning lightly with salt.
Mash Avo: In a small bowl, mash avocado with a pinch of salt.
Assemble: Plate roasted sweet potatoes, ground beef, and mashed avocado side-by-side in a bowl. Serve warm.
