- 2 lbs boneless, skinless Chicken Breast
- 1 medium Fresh Pineapple, cut into chunks
- 1/4 cup Soy Sauce
- 1/4 cup Brown Sugar
- 3 cloves Garlic, minced
- 1-inch piece Ginger, grated
- 1 medium Red Bell Pepper, sliced
- Green Onions, for garnish
- 1 tablespoon Sesame Oil
- Salt and Pepper, to taste
Instructions
- Prep the Marinade: In a sizable bowl, whisk together the soy sauce, brown sugar, minced garlic, and grated ginger until the sugar dissolves.
- Marinate the Chicken: Cut the chicken breasts into bite-sized chunks and add them to the marinade. Cover and let it sit for at least 30 minutes.
- Heat Up the Blackstone: Preheat the Blackstone griddle to medium-high heat.
- Add the Chicken: Drizzle sesame oil on the griddle, and toss on the marinated chicken. Cook for about 6-7 minutes, flipping occasionally.
- Throw on the Pineapple: Add the pineapple chunks and sliced bell pepper to the griddle. Cook for around 4-5 minutes.
- Stir It Up: Mix all the ingredients together and cook for another minute or two.
- Taste and Adjust: Add salt and pepper if needed.
- Finish Strong: Remove from the griddle and let it rest before serving.
Notes
Serve over rice with grilled veggies for a complete meal. Add garnishes like sliced green onions and sesame seeds for extra flavor.
