Description

Ingredients

  • 2 lbs boneless, skinless Chicken Breast
  • 1 medium Fresh Pineapple, cut into chunks
  • 1/4 cup Soy Sauce
  • 1/4 cup Brown Sugar
  • 3 cloves Garlic, minced
  • 1-inch piece Ginger, grated
  • 1 medium Red Bell Pepper, sliced
  • Green Onions, for garnish
  • 1 tablespoon Sesame Oil
  • Salt and Pepper, to taste

Instructions

  1. Prep the Marinade: In a sizable bowl, whisk together the soy sauce, brown sugar, minced garlic, and grated ginger until the sugar dissolves.
  2. Marinate the Chicken: Cut the chicken breasts into bite-sized chunks and add them to the marinade. Cover and let it sit for at least 30 minutes.
  3. Heat Up the Blackstone: Preheat the Blackstone griddle to medium-high heat.
  4. Add the Chicken: Drizzle sesame oil on the griddle, and toss on the marinated chicken. Cook for about 6-7 minutes, flipping occasionally.
  5. Throw on the Pineapple: Add the pineapple chunks and sliced bell pepper to the griddle. Cook for around 4-5 minutes.
  6. Stir It Up: Mix all the ingredients together and cook for another minute or two.
  7. Taste and Adjust: Add salt and pepper if needed.
  8. Finish Strong: Remove from the griddle and let it rest before serving.

Notes

Serve over rice with grilled veggies for a complete meal. Add garnishes like sliced green onions and sesame seeds for extra flavor.
