This Slow Cooker Beef and Potato Casserole is hearty, cheesy, and full of down-home comfort. Ingredients
1 lb ground beef
1 small onion, diced
4–5 medium potatoes, peeled and thinly sliced
1 (10.5 oz) can cream of mushroom or cheddar soup
1/2 cup milk
1 1/2 cups shredded cheddar cheese
1 tsp garlic powder
Salt & pepper to taste
Optional: fresh parsley or green onions for garnish
Instructions
In a skillet, brown ground beef with diced onion. Drain fat.
In a bowl, whisk together soup, milk, garlic powder, salt, and pepper.
Grease your slow cooker.
Layer half the potatoes in the bottom, followed by half the beef, half the soup mixture, and half the cheese.
Repeat layers, ending with cheese on top.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
Garnish and serve hot.
