If your ramen game needs an upgrade, this is it. The first time I made this slow-cooked version, the kitchen smelled amazing all day—and it tasted even better. Juicy ground beef, sweet bell peppers, and tender noodles all soak up a savory-sweet sauce that feels like a warm hug. Easy to prep, impossible to resist!
Ingredients
1 lb ground beef (sirloin 93/7 recommended)
1 cup matchstick carrots
1 medium red bell pepper, sliced
2–3 scallions, chopped
3 cloves garlic, minced
½ cup low-sodium soy sauce
2 tbsp brown sugar
14.25 oz chicken or beef stock
2 packs ramen noodles (discard seasoning)
Optional: sesame seeds & extra scallions for topping
Instructions
Add ground beef, carrots, bell pepper, scallions, garlic, soy sauce, brown sugar, and stock to slow cooker.
Cover and cook on LOW for 4 hours or HIGH for 2.
In the last 10 minutes, break ramen noodles into the pot. Stir and cook until noodles are tender.
Garnish with sesame seeds and scallions.
