- 2 Boneless, Skinless Chicken Breasts
- 1 can Black Beans, rinsed
- 1 cup Corn (Frozen or Canned)
- 1 can Diced Tomatoes
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1–2 Bell Peppers, chopped
- 1 cup Brown Rice
- 1 tsp Chili Powder
- 1 tsp Cumin
- Salt and Pepper, to taste
- 2 cups Chicken Broth or Water
Instructions
- Prep your ingredients: Dice onions, mince garlic, and chop bell peppers.
- Create the flavor base by mixing the tomatoes, black beans, corn, onion, garlic, bell peppers, chili powder, cumin, salt, and pepper in a bowl.
- Add the chicken breasts to the slow cooker and pour the vegetable mixture on top.
- Pour chicken broth or water over the rice, covering it by about an inch.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- Shred the chicken after cooking and stir everything together.
- Serve into bowls and top with your favorite toppings.
