A comforting and delicious slow cooker chicken burrito bowl packed with flavors and perfect for busy weeknights.


Ingredients

  • 2 Boneless, Skinless Chicken Breasts
  • 1 can Black Beans, rinsed
  • 1 cup Corn (Frozen or Canned)
  • 1 can Diced Tomatoes
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 12 Bell Peppers, chopped
  • 1 cup Brown Rice
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • Salt and Pepper, to taste
  • 2 cups Chicken Broth or Water

Instructions

  1. Prep your ingredients: Dice onions, mince garlic, and chop bell peppers.
  2. Create the flavor base by mixing the tomatoes, black beans, corn, onion, garlic, bell peppers, chili powder, cumin, salt, and pepper in a bowl.
  3. Add the chicken breasts to the slow cooker and pour the vegetable mixture on top.
  4. Pour chicken broth or water over the rice, covering it by about an inch.
  5. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken after cooking and stir everything together.
  7. Serve into bowls and top with your favorite toppings.
