Slow Cooker Greek Chicken

  • Author: Emily Walker
  • Total Time: 6–7 hrs
  • Yield: 6 1x

Description

This dish is a nod to sun-soaked Greek afternoons—simple, clean, and full of zest. I remember the first time making it for a family dinner, the aroma of herbs and lemon filling the kitchen had everyone asking for seconds. It’s healthy, hands-off, and always a crowd-pleaser.

Ingredients

Scale

2 lbs boneless, skinless chicken breasts or thighs

1 onion, thinly sliced

¼ cup chicken broth

Juice of 1 lemon (about 3 tbsp)

1 tbsp olive oil

4 garlic cloves, minced

1½ tsp dried oregano

1½ tsp dried thyme

1 tsp fine sea salt

½ tsp black pepper

Instructions

Layer the Base: Place sliced onions in the bottom of the slow cooker.

Add Chicken: Place chicken over the onions.

Mix the Marinade: In a small bowl, whisk together broth, lemon juice, olive oil, garlic, and spices.

Pour and Cook: Pour mixture over the chicken.

Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.

Serve with rice, quinoa, or a Greek salad for a complete meal.

Notes

Light, vibrant, and full of Mediterranean magic—this is slow cooker cooking at its best.
