Instructions
- Prep your potatoes: Start by peeling and chopping the russet potatoes into equal-sized chunks. This ensures they cook evenly.
- Boil: Place them in a pot with cold water and a pinch of salt, bring to a boil, and cook for 15-20 minutes until fork-tender.
- Cook the tater tots according to package instructions until crispy and golden brown, about 20-25 minutes in a preheated oven.
- Smash the cooked tater tots in a bowl with a fork or masher to create rustic chunks.
- Mix the boiled potatoes with smashed tater tots, onion, celery, and herbs in a large mixing bowl.
- Add mayonnaise, Dijon mustard, salt, and pepper in a separate bowl, then pour over the potato mixture, folding gently until well combined.
- Taste and adjust seasonings as needed, then cover and refrigerate for at least 30 minutes to meld the flavors.
