Ingredients
- Chuck Roast (3-4 pounds)
- BBQ Rub (Homemade or Store-Bought)
- BBQ Sauce (Sweet or Spicy)
- Tortillas (Corn or Flour)
- Toppings (Cilantro, diced onions, jalapeños, lime wedges, avocado)
- Smoker or Grill
- Wood Chips (Hickory, Mesquite, or Apple)
Instructions
- Start by trimming excess fat from your chuck roast.
- Generously coat the beef with BBQ rub and let it sit for 30 minutes.
- Preheat your smoker to 225°F to 250°F.
- Once at temperature, place the beef on the grates and smoke for 4-6 hours.
- Remove the beef at an internal temperature of 195°F to 205°F.
- Let the beef rest for at least 30 minutes.
- Shred the beef and mix with BBQ sauce.
- Warm tortillas in a skillet for 30 seconds per side.
- Assemble tacos with beef and desired toppings.
