Ingredients
1 cup pumpkin purée
1 cup granulated sugar
½ cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
Optional: ½ cup chopped walnuts or chocolate chips
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Mix in pumpkin, egg, and vanilla until well combined.
In a separate bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Gradually stir dry ingredients into wet ingredients. Fold in nuts or chocolate if using.
Drop spoonfuls of dough onto baking sheets.
Bake for 10–12 minutes or until edges are just golden. Let cool on a wire rack.
