South African Potato Salad

Description

A comforting classic dish featuring creamy potatoes mixed with fresh veggies and a zesty dressing, perfect for gatherings and family meals.


Ingredients

  • 2 lbs Potatoes
  • 2 medium Carrots
  • 1 stalk Celery
  • 1 small Red Onion
  • 4 Hard-Boiled Eggs
  • 1 cup Mayonnaise
  • 12 tbsp Dijon Mustard
  • 1/4 cup Sweet Pickle Relish
  • Salt and Pepper to taste
  • Fresh Parsley (optional)

Instructions

  1. Wash and peel the potatoes. Cube them into bite-sized pieces.
  2. Cook the potatoes in salted water for 15-20 minutes until fork-tender, then drain and let cool.
  3. Chop the carrots, celery, and red onion, then set aside in a mixing bowl.
  4. Hard-boil the eggs, then chop them into small pieces.
  5. In a separate bowl, mix the mayonnaise, Dijon mustard, sweet pickle relish, salt, and pepper until smooth.
  6. Add the cooled potatoes and chopped eggs to the veggies, followed by the dressing, and fold gently to combine.
  7. Cover and chill in the fridge for at least 1 hour before serving. Garnish with fresh parsley.
