- 2 lbs Potatoes
- 2 medium Carrots
- 1 stalk Celery
- 1 small Red Onion
- 4 Hard-Boiled Eggs
- 1 cup Mayonnaise
- 1–2 tbsp Dijon Mustard
- 1/4 cup Sweet Pickle Relish
- Salt and Pepper to taste
- Fresh Parsley (optional)
Instructions
- Wash and peel the potatoes. Cube them into bite-sized pieces.
- Cook the potatoes in salted water for 15-20 minutes until fork-tender, then drain and let cool.
- Chop the carrots, celery, and red onion, then set aside in a mixing bowl.
- Hard-boil the eggs, then chop them into small pieces.
- In a separate bowl, mix the mayonnaise, Dijon mustard, sweet pickle relish, salt, and pepper until smooth.
- Add the cooled potatoes and chopped eggs to the veggies, followed by the dressing, and fold gently to combine.
- Cover and chill in the fridge for at least 1 hour before serving. Garnish with fresh parsley.
