Ingredients
1 cup ripe plums, pitted and chopped
½ cup apple cider vinegar
¼ cup honey or maple syrup
¼ tsp ground allspice
1 small sprig fresh oregano (plus more for garnish)
Sparkling water
Ice cubes
Optional: plum slices for garnish
Instructions
In a saucepan over medium heat, combine plums, vinegar, honey, allspice, and oregano. Simmer for 10 minutes, stirring occasionally.
Remove from heat and let cool. Strain through a fine mesh into a jar or bottle. Chill the shrub base for at least 1 hour (or overnight for deeper flavor).
To serve, fill a glass with ice and 2–3 tablespoons of shrub base. Top with sparkling water.
