Ingredients

  • 1 cup Sushi Rice
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Granulated Sugar
  • Salt
  • 8 ounces Fresh Ahi Tuna
  • 2 tablespoons Mayonnaise
  • 1 to 2 tablespoons Sriracha
  • 1 tablespoon Sesame Oil
  • 2 Green Onions
  • Furikake Seasoning (optional)
  • Avocado Oil (for frying)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions.
  2. Mix the seasoning by combining rice vinegar, sugar, and salt.
  3. Fold the seasoning into the cooked rice gently.
  4. Form seasoned rice into small rectangles or squares.
  5. Heat avocado oil in a skillet over medium-high heat.
  6. Fry the rice cakes until golden and crispy, about 3-4 minutes on each side.
  7. Dice the Ahi tuna and mix with mayo, sriracha, sesame oil, and green onions.
  8. Transfer the crispy rice cakes to a platter and top with the spicy tuna mixture.
  9. Sprinkle with furikake seasoning and sliced green onions before serving.
