Ingredients
2–3 boneless, skinless chicken breasts
1 cup chopped spinach (fresh or thawed frozen)
1 cup canned or jarred artichoke hearts (chopped)
½ cup cream cheese
¼ cup sour cream
½ cup grated Parmesan
1 cup shredded mozzarella (plus more for topping)
2 cloves garlic, minced
Salt & pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a bowl, mix spinach, artichokes, cream cheese, sour cream, Parmesan, mozzarella, garlic, salt, and pepper.
Place chicken breasts in a greased baking dish. Spread the spinach artichoke mixture generously over each.
Top with extra mozzarella.
Bake uncovered for 25–30 minutes, or until chicken is fully cooked and cheese is bubbly.
