Ingredients

  • 6 large Eggs
  • 2 cups Fresh Spinach, chopped
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Bell Pepper, diced
  • 1 small Onion, diced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Oil or Non-stick Spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the muffin tray by coating each cup with olive oil or non-stick spray.
  3. Sauté the diced onions and bell peppers in a skillet with olive oil for 2-3 minutes, then add the chopped spinach and wilt it for 1 minute.
  4. Whisk together the eggs, salt, and black pepper in a large bowl.
  5. Combine the sautéed veggies into the egg mixture and mix in the shredded cheddar cheese.
  6. Pour the mixture into the muffin tins, filling them about 2/3 full.
  7. Bake for 20-25 minutes, until puffed and lightly golden.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
