Spinach and Ricotta Stuffed Shells

Description

A comforting dish featuring jumbo pasta shells filled with spinach and ricotta cheese, baked in marinara sauce.


Ingredients

  • Jumbo Shells (12)
  • Ricotta Cheese (1 ½ cups)
  • Fresh Spinach (2 cups, chopped)
  • Mozzarella Cheese (1 cup, shredded)
  • Parmesan Cheese (1/2 cup, grated)
  • Garlic (2 cloves, minced)
  • Egg (1)
  • Marinara Sauce (2 cups)
  • Italian Seasoning (1 teaspoon)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook jumbo shells in a large pot of salted boiling water for about 9-11 minutes until al dente.
  3. In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for about 1 minute. Then add chopped spinach and cook until wilted, about 3-4 minutes.
  4. In a mixing bowl, combine ricotta cheese, sautéed spinach, egg, half the mozzarella, half the Parmesan, and season with Italian seasoning, salt, and pepper. Mix well.
  5. Stuff each shell with the ricotta-spinach mixture.
  6. In a baking dish, spread a layer of marinara sauce on the bottom. Arrange the stuffed shells, seam side up, and cover with remaining marinara sauce. Sprinkle with remaining mozzarella and Parmesan.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving.
