6 strawberry shortcake biscuits (homemade or store-bought)
1 pint vanilla or strawberry ice cream
Optional: extra chopped strawberries or crushed freeze-dried strawberries for garnish
Instructions
Slice each biscuit in half horizontally.
Add a generous scoop of ice cream to the bottom half.
Top with the second biscuit half and gently press to sandwich.
Wrap each sandwich in parchment paper and freeze for 1–2 hours until firm.
Serve chilled or store in the freezer for a quick summer dessert.
