12 oz bowtie (farfalle) pasta
2 cups cooked chicken breast, sliced or shredded
1 cup cherry tomatoes, halved
½ cup basil pesto (store-bought or homemade)
¼ cup pine nuts, lightly toasted
Salt & pepper to taste
Grated Parmesan (optional for serving)
Cook pasta according to package directions. Drain and set aside.
In a large skillet, warm the pesto over low heat.
Add cooked chicken and cherry tomatoes. Stir gently until warmed through.
Toss in the cooked pasta and pine nuts. Mix well to coat everything in that beautiful pesto.
Season with salt and pepper to taste.
Serve warm or at room temp with a sprinkle of Parmesan if desired.
