- 1 cup Pineapple Chunks (Fresh or Canned)
- 1/4 cup Soy Sauce
- 1/4 cup Brown Sugar
- 2 cloves Garlic (Minced)
- 1 tablespoon Ginger (Fresh or Ground)
- 1/4 teaspoon Red Pepper Flakes (Optional)
- 2 Green Onions (for garnish)
Instructions
- Prepare the Ingredients by chopping the garlic and grating the ginger.
- Make the Sauce by combining pineapple chunks, soy sauce, brown sugar, minced garlic, and grated ginger in a medium bowl. Whisk until combined.
- Add the Chicken to the Crockpot and place the chicken thighs inside.
- Pour the Sauce Over the Chicken, ensuring each piece is coated.
- Set It and Forget It by covering the crockpot and cooking on low for 6-8 hours or high for 3-4 hours.
- Shred the Chicken using two forks once cooked.
- Combine Chicken with Sauce by stirring the shredded chicken back into the sauce in the crockpot.
- Serve It Up over rice or quinoa, garnishing with green onions.
Notes
For a spicier kick, add red pepper flakes to the sauce. Taste the sauce before pouring it over the chicken to adjust flavors as needed.
