Taco Grilled Cheese

Ingredients

4 slices of bread (white, sourdough, or whole wheat)

1/2 cup cooked taco-seasoned ground beef or shredded chicken (optional for meat version)

1/2 cup shredded cheddar cheese

1/2 cup Monterey Jack or pepper jack cheese

1/2 tomato, diced

1/4 cup chopped onion

1/4 cup chopped avocado or guacamole

1 tbsp sour cream

1 tsp taco seasoning

2 tbsp butter

Instructions

In a bowl, mix tomato, onion, taco seasoning, and sour cream.

Butter one side of each bread slice. On the non-buttered side, layer cheese, taco mixture, and meat (if using).

Top with another slice of bread, buttered side facing out.

Grill in a skillet over medium heat for 3–4 minutes per side until golden brown and gooey inside.

Serve hot with guacamole on top or on the side for dipping!
