Description

A refreshing twist on traditional salsa with sweet watermelon, crunchy vegetables, and a zesty lime finish.


Ingredients

  • 2 cups watermelon, diced
  • 1 cup cucumber, diced
  • 1 small red onion, finely diced
  • 1 small jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and black pepper, to taste
  • Optional: A pinch of honey or agave syrup

Instructions

  1. Prep Your Ingredients: Gather all your ingredients and rinse them. Dice the watermelon and place in a large mixing bowl.
  2. Chop the Veggies: Remove seeds from cucumbers if desired, then chop into small pieces and add to the bowl. Finely dice the red onion and toss it in as well.
  3. Add the Spice: Seed and mince the jalapeño, then add to the bowl.
  4. Freshen it Up: Chop cilantro and add it along with salt and pepper.
  5. Squeeze the Lime: Juice the fresh limes over the mixture.
  6. Mix It Up: Gently fold everything together and refrigerate for at least 30 minutes.

Notes

For a fun presentation, serve in a hollowed-out watermelon half. Store leftovers in an airtight container in the fridge for up to 4 days.
