Ingredients
Balsamic Grilled Chicken
1 lb boneless skinless chicken breasts
2 tbsp balsamic vinegar
1 tbsp pesto
1 tsp honey
Pinch red pepper flakes
Kosher salt & black pepper to taste
Tomato Basil Pasta
12 oz uncooked pasta (gluten-free if needed)
2 tbsp olive oil
2 garlic cloves, minced
2 cups cherry tomatoes, halved
2 tbsp fresh basil, chopped
Pinch red pepper flakes
Kosher salt & pepper to taste
3 tbsp shredded Parmesan cheese
Optional: balsamic glaze & more basil for garnish
Instructions
Marinate chicken with balsamic, pesto, honey, red pepper, salt, and pepper. Let sit 20 minutes.
Grill or pan-sear chicken 5–6 mins per side until cooked through. Let rest, then slice.
Cook pasta until al dente. Drain and set aside.
In a skillet, heat olive oil, sauté garlic and tomatoes until just softened.
Add pasta, basil, red pepper, salt, and Parmesan. Toss to combine.
Top with sliced chicken, extra basil, and balsamic glaze if using.
