Ingredients
2 cups ripe tomatoes, chopped
2 cups honeydew melon, cubed
¼ cup cucumber, peeled and chopped
2 tbsp red onion, finely diced
1 tbsp sherry vinegar
2 tbsp olive oil
Salt and pepper to taste
Fresh mint or basil for garnish
Instructions
In a blender, combine tomatoes, honeydew, cucumber, red onion, vinegar, and olive oil. Blend until silky smooth.
