Ingredients
- Puff Pastry
- Fresh Tomatoes (preferably heirloom)
- Olive Oil
- Salt
- Fresh Basil
- Cheese (optional: feta, goat cheese, or mozzarella)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry to about ¼-inch thickness and cut out 4-inch circles.
- Line a baking sheet with parchment paper and place the pastry circles on it. Poke holes in the center.
- Brush olive oil over each circle and sprinkle with salt.
- Slice the tomatoes into thin rounds and layer them over each pastry circle.
- Drizzle more olive oil over the tomatoes and scatter torn basil leaves on top.
- Optional: sprinkle cheese over the tomatoes.
- Bake for 20-25 minutes until golden brown and flaky.
- Let cool slightly before serving.
