Description

Delight in these crispy Tomato Tartlets made with flaky puff pastry and juicy tomatoes, perfect for summer gatherings or a cozy snack.


Ingredients

  • Puff Pastry
  • Fresh Tomatoes (preferably heirloom)
  • Olive Oil
  • Salt
  • Fresh Basil
  • Cheese (optional: feta, goat cheese, or mozzarella)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry to about ¼-inch thickness and cut out 4-inch circles.
  3. Line a baking sheet with parchment paper and place the pastry circles on it. Poke holes in the center.
  4. Brush olive oil over each circle and sprinkle with salt.
  5. Slice the tomatoes into thin rounds and layer them over each pastry circle.
  6. Drizzle more olive oil over the tomatoes and scatter torn basil leaves on top.
  7. Optional: sprinkle cheese over the tomatoes.
  8. Bake for 20-25 minutes until golden brown and flaky.
  9. Let cool slightly before serving.
