Description

A vibrant and flavorful potato salad featuring fresh dill, creamy yogurt, and tangy lemon juice, perfect as a side dish or stand-alone delight.


Ingredients

  • 2 pounds Yukon Gold or Red Potatoes
  • ½ cup fresh Dill, finely chopped
  • 1 cup Greek Yogurt
  • ½ cup Mayonnaise
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic, minced
  • Salt & Pepper, to taste
  • 2 tablespoons Olive Oil
  • ¼ cup Red Onion, finely chopped

Instructions

  1. Boil the potatoes by rinsing, chopping into cubes, boiling in salted water for 12-15 minutes until tender, then drain and cool.
  2. Prepare the dressing by combining Greek yogurt, mayonnaise, lemon juice, minced garlic, olive oil, salt, and pepper in a bowl and whisk until creamy.
  3. Fold the cooled potatoes into the dressing and mix gently.
  4. Stir in fresh dill and red onion, adjusting seasoning as preferred.
  5. Chill the salad in the fridge for at least 30 minutes before serving.
  6. Serve garnished with extra dill and enjoy!

Notes

This salad can be made ahead of time and holds well in the fridge for up to 3 days. Adjust the seasoning according to taste.
