- 2 pounds Yukon Gold or Red Potatoes
- ½ cup fresh Dill, finely chopped
- 1 cup Greek Yogurt
- ½ cup Mayonnaise
- 2 tablespoons Lemon Juice
- 1 clove Garlic, minced
- Salt & Pepper, to taste
- 2 tablespoons Olive Oil
- ¼ cup Red Onion, finely chopped
Instructions
- Boil the potatoes by rinsing, chopping into cubes, boiling in salted water for 12-15 minutes until tender, then drain and cool.
- Prepare the dressing by combining Greek yogurt, mayonnaise, lemon juice, minced garlic, olive oil, salt, and pepper in a bowl and whisk until creamy.
- Fold the cooled potatoes into the dressing and mix gently.
- Stir in fresh dill and red onion, adjusting seasoning as preferred.
- Chill the salad in the fridge for at least 30 minutes before serving.
- Serve garnished with extra dill and enjoy!
Notes
This salad can be made ahead of time and holds well in the fridge for up to 3 days. Adjust the seasoning according to taste.
