Turkish Eggs with Garlicky Yogurt

2 eggs

1 cup plain Greek yogurt

1 garlic clove, minced

1 tbsp olive oil

1 tbsp butter

1/2 tsp Gochugaru (or a mix of paprika and red pepper flakes)

Salt to taste

Sourdough or crusty bread (for serving)


Instructions

In a bowl, mix yogurt with garlic and a pinch of salt. Let it sit at room temperature.

Bring a pot of water to a gentle simmer, add a splash of vinegar (optional), and poach the eggs for 3–4 minutes.

In a small pan, melt the butter and olive oil. Add Gochugaru (or your spice mix) and heat gently for about 30 seconds.

Spread the garlic yogurt on a plate, place the poached eggs on top, and spoon over the spiced butter.

Serve with warm sourdough or any crusty bread you love.
