  • 1 tablespoon ground cinnamon
  • 2 tablespoons coconut oil, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the gluten-free flour, almond flour, coconut sugar, and baking soda in a mixing bowl.
  3. Add the melted coconut oil and plant-based milk, mixing until a sticky dough forms.
  4. Mix the coconut sugar, cinnamon, softened coconut oil, and a pinch of salt in a small bowl for the filling.
  5. Grab a tablespoon of dough, flatten it, and place a teaspoon of filling in the center. Wrap and roll into a ball.
  6. Place the cookie balls on a lined baking sheet, spaced apart.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Allow to cool for 5 minutes on the sheet before transferring to a wire rack.
