- 1 tablespoon ground cinnamon
- 2 tablespoons coconut oil, softened
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the gluten-free flour, almond flour, coconut sugar, and baking soda in a mixing bowl.
- Add the melted coconut oil and plant-based milk, mixing until a sticky dough forms.
- Mix the coconut sugar, cinnamon, softened coconut oil, and a pinch of salt in a small bowl for the filling.
- Grab a tablespoon of dough, flatten it, and place a teaspoon of filling in the center. Wrap and roll into a ball.
- Place the cookie balls on a lined baking sheet, spaced apart.
- Bake for 10-12 minutes or until edges are golden.
- Allow to cool for 5 minutes on the sheet before transferring to a wire rack.
- Whisk together a glaze of powdered sugar and plant-based milk to drizzle on cooled cookies, if desired.
