Ingredients

  • 2 pounds Potatoes (Yukon Gold or red)
  • 1/4 cup Olive Oil
  • 1/2 cup Vegan Mayonnaise
  • 2 tbsp Dijon Mustard
  • 2 tbsp Apple Cider Vinegar
  • 1 cup Celery (diced)
  • 1/2 cup Red Onion (diced)
  • 1/4 cup Fresh Herbs (parsley, chopped)
  • Salt & Pepper (to taste)
  • Paprika (for garnish)

Instructions

  1. Prep Your Potatoes: Scrub the potatoes clean and cut them into quarters. Place in a pot, cover with water and add salt.
  2. Boil to Perfection: Bring to a boil, then simmer for 15-20 minutes until fork-tender.
  3. Drain and Smash: Drain the potatoes and let cool before smashing to a chunky consistency.
  4. Mix the Good Stuff: In a bowl, whisk olive oil, vegan mayo, mustard, and vinegar until smooth.
  5. Combine with Veggies: Add smashed potatoes to a bowl, pour dressing over, and fold in celery, red onion, and herbs.
  6. Season to Taste: Add salt, pepper, and paprika to your liking.
  7. Chill Out: Refrigerate for at least 30 minutes to meld flavors.
  8. Garnish and Serve: Toss gently and garnish with extra paprika before serving.
