Ingredients

- 4 cups watermelon, cubed
- 2 cups cucumber, sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons lime juice, freshly squeezed
- 1 tablespoon olive oil
Instructions
- Prep the ingredients: Chop the watermelon and cut it into bite-sized cubes.
- Chop the cucumber: Slice the cucumbers in half lengthwise and remove the seeds. Cut into half-moons or cubes.
- Mix it all together: In a large mixing bowl, combine the watermelon, cucumber, and crumbled feta.
- Add freshness: Toss in the chopped mint leaves and gently stir.
- Dress it up: Squeeze fresh lime juice and drizzle with olive oil. Toss gently.
- Taste and adjust: Add salt or more lime juice to taste.
- Chill and serve: Let it chill in the fridge for 20-30 minutes before serving.
