Ingredients
1.25 lbs boneless, skinless chicken breasts
2 (14.5 oz) cans white beans, drained
4 cups chicken broth
1 cup chopped yellow onion
2 garlic cloves, chopped
1 tsp salt
1½ tsp dried oregano
¾ tsp dried thyme
1 tbsp cumin
Toppings (optional but recommended)
Lemon wedges
Avocado slices
Greek yogurt
Chopped red onion
Fresh dill
Crumbled feta
Crushed red pepper
Instructions
In a large pot, combine chicken, beans, broth, onion, garlic, and all seasonings.
Bring to a boil, then reduce to a simmer. Cover and cook for 20–25 minutes, until chicken is cooked through.
Remove chicken, shred, and return to the pot. Simmer another 5 minutes.
Serve hot, topped with your choice of lemon, avocado, yogurt, red onion, dill, feta, and red pepper flakes.
