Ingredients
- Chicken (Bone-in, skin-on pieces)
- Pickle Brine
- All-Purpose Flour
- Cornstarch
- Eggs
- Buttermilk (or milk with lemon juice)
- Spices (Paprika, garlic powder, onion powder, salt, and pepper)
- Oil (for frying)
Instructions
- Marinate the chicken in pickle brine for at least 4 hours or overnight.
- In one bowl, mix flour, cornstarch, and spices; in another bowl, whisk eggs and buttermilk.
- Dredge chicken in egg mixture, then in flour mixture, coating evenly.
- Heat oil in a deep skillet to 350°F (175°C).
- Fry chicken pieces for 12-15 minutes, flipping halfway through, until golden brown and cooked through.
- Drain chicken on a wire rack and let rest for 5-10 minutes before serving.
Notes
For extra flavor, customize spices and consider using a mix of vinegar, water, and spices if you don’t have pickle brine.
