Ingredients
1 sweet potato
½ tsp paprika
½ tsp salt
1 tbsp olive oil
1 cup Greek yogurt
⅓ tsp black pepper
1 tsp dry basil
Instructions
Scrub sweet potato clean and pierce it a few times with a fork.
Rub with olive oil, sprinkle with salt and paprika.
Preheat air fryer to 380°F (193°C).
Place sweet potato in the basket and cook for 35–40 minutes, until tender inside and crispy outside.
Meanwhile, mix yogurt with pepper and dry basil.
Once cooked, slice open the sweet potato and top generously with the herbed yogurt.
