- 2 medium carrots
- 1 cup peas, fresh or frozen
- 1 cup diced pickles
- 1 cup cooked chicken or ham, diced
- 4 hard-boiled eggs, chopped
- 1 cup mayonnaise

- Salt and pepper to taste
Instructions
- Prepare the potatoes and carrots: Wash, peel, and chop them into small, even cubes. Place them into a pot of salted water, then bring to a boil and simmer for 10-12 minutes.
- Mix in the veggies: In a bowl, toss together the peas and diced pickles.
- Add the meat and eggs: Once potatoes and carrots are cool, add them along with the diced chicken or ham and chopped hard-boiled eggs.
- Craft the dressing: In a separate bowl, mix the mayonnaise and mustard together.
- Bring it all together: Pour the dressing over the salad mixture, fold gently, and season with salt and pepper. Let it chill in the fridge for at least an hour.
