A comforting Greek Avgolemono Soup that combines flavors of chicken, lemon, and rice for a warm, soulful dish.
Ingredients
- Chicken Broth (6 cups)
- Boneless Chicken Breast (1 lb)
- Long-Grain Rice (1/2 cup)
- Large Eggs (3)
- Fresh Lemon Juice (1/3 cup)
- Salt & Pepper (to taste)
- Fresh Parsley (for garnish)
Instructions
- Prepare the chicken: In a pot, bring your chicken broth to a gentle boil. Add the boneless chicken breast and gently simmer for about 15-20 minutes until cooked through.
- Cook the rice: While the chicken simmers, rinse the rice under cold water. Once cooked, remove chicken from the broth and set aside. Add the rinsed rice to the boiling broth and cook for about 12-15 minutes.
- Make the Avgolemono mixture: In a bowl, whisk together the eggs and lemon juice until well combined. Temper the mixture by slowly adding a ladle of hot broth while whisking.
- Combine everything: Once the rice is cooked, shred the chicken and add it back into the pot. Turn off the heat and slowly pour in the egg-lemon mixture while stirring gently.
- Finish and serve: Taste and adjust seasoning. Serve hot, garnished with fresh parsley.
Notes
For a vegetarian version, swap chicken broth for vegetable broth and use chickpeas instead of chicken.
