Description

A comforting and nutritious dish featuring baked eggs with creamy feta, bursting tomatoes, and vibrant spinach.


Ingredients

  • 200g Feta Cheese
  • 250g Cherry Tomatoes
  • 150g Fresh Spinach
  • 4 Large Eggs
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep a small baking dish by drizzling olive oil in it.
  3. Layer the cherry tomatoes evenly in the dish and sprinkle with salt and pepper.
  4. Add the fresh spinach to the tomatoes, tucking it in snugly.
  5. Nestle the crumbled feta cheese over the top.
  6. Create wells in the mixture using the back of a spoon for the eggs.
  7. Crack the eggs into the wells.
  8. Drizzle more olive oil over the dish.
  9. Bake for 20-25 minutes, until eggs are set to your liking.
  10. Finish with fresh basil before serving.

Feel free to customize with herbs or add other vegetables like bell peppers or mushrooms.
