- 200g Feta Cheese
- 250g Cherry Tomatoes
- 150g Fresh Spinach
- 4 Large Eggs
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- Fresh Basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Prep a small baking dish by drizzling olive oil in it.
- Layer the cherry tomatoes evenly in the dish and sprinkle with salt and pepper.
- Add the fresh spinach to the tomatoes, tucking it in snugly.
- Nestle the crumbled feta cheese over the top.
- Create wells in the mixture using the back of a spoon for the eggs.
- Crack the eggs into the wells.
- Drizzle more olive oil over the dish.
- Bake for 20-25 minutes, until eggs are set to your liking.
- Finish with fresh basil before serving.
