1 chicken filet
½ cup low-fat cottage cheese
2 tbsp Ranch dressing
2 tbsp shredded cheddar cheese (reduced fat)
2 tbsp BBQ sauce
Optional Toppings: Chopped scallions, sliced radishes, fresh cilantro, jalapeños, corn, or red bell peppers.
Step 1: Bake the Chicken
Preheat oven to 400°F (200°C).
Place the chicken on a baking tray and cook for 20 minutes, or until internal temp reaches 165°F (75°C).
Step 2: Make the Cottage Cheese Base
Mix cottage cheese and ranch dressing in a bowl until creamy and smooth.
Step 3: Sauce It Up
In a pan, heat BBQ sauce and coat the cooked chicken in it.
Step 4: Build Your Bowl
In a serving bowl, layer the creamy cottage cheese base, top with BBQ chicken, drizzle more BBQ sauce, and sprinkle shredded cheddar. Add your favorite toppings!
