Ingredients

1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 (10 oz) can enchilada sauce
1 (14.5 oz) can diced tomatoes, undrained
2 cups uncooked pasta (penne or rotini work well)
2 cups beef broth
1 tsp chili powder
1 tsp cumin
Salt and pepper to taste
1 ½ cups shredded cheddar cheese
Fresh cilantro or green onions for garnish (optional)
Instructions
In a large skillet, brown ground beef with onion and garlic. Drain any excess fat.
Stir in enchilada sauce, tomatoes, pasta, broth, and seasonings. Bring to a boil.
Reduce heat to low, cover, and simmer for 15–20 minutes or until pasta is tender.
Stir in half the cheese and sprinkle the rest on top. Cover and let melt.
Garnish and serve hot!
